While from my book you heard about my special recipe of guacamole, that I never wrote about it, I am disclosing my Green Fresh Pesto recipe:
25 g fresh Basil, the strong and aromatic one, cut in small pieces together with 100 g feta (low fat, I am using the one of 20% fat) also cut in small pieces together with the juice from 1 Lime (but you can use lemon too), olive oil and sunflower oil, and everything mixed together in the blender. The oil has to be added as much as the blender need it in order to spin it. After that blending is over add some salt according to your taste. Please have in mind that after the blending is over you can add as much olive oil you want, cause if there is too much it will come to surface.
After everything is put in jar/s, leave it in the fridge for few hours so the strong aroma to settle into the mix.
Only after that time you will have the real taste, that is why I don’t recommend too much salt or lemon right from the start so you can add it, if your taste requires more, at this point when all the strong basil aroma is settled.
Enjoy it with crackers, toasted wholemeal bread, or even with my fav lately the wholemeal burger bun toasted. Yummy
